IMG_0927Today’s recipe is on of my all time favorites, and a favorite of the family too! These pancakes are simply yummy and you’ll never fell like you’re missing out again at breakfast time. Another great thing I love to do with this recipe is to mix a large batch of the dry ingredients . Use an airtight container and you have you’re very own homemade pancake mix for those day’s when time is short or company drops in.

Whisk together –

1 cup brown rice flour

1/2 teaspoon xanthan gum

1/4 teaspoon salt

1/2 Tablespoon sugar

2 teaspoons baking powder.


1 large egg

1 Tablespoon vegetable oil

1 1/3 cup milk (dairy, lactose free, almond or any other milk of your choice) ***NOTE if you use a thicker milk like almond you will need to increase the amount

Optional – add 1/4 cup blueberries or raspberries

Top with sliced bananas or pecans.
